摘要
明胶因其特有的生物大分子结构赋予其多种功能特性而被广泛应用,明胶的稳定特性在乳制品生产过程中能使其达到预期的食用效果。在分析明胶和乳制品结合特性的基础上,为了快速准确检测明胶来源,研究不同明胶检测方法的应用特性与发展方向,分析各种明胶检测方法的鉴别原理及研究动向,介绍明胶传统检测方法与新型测定方法的优缺点,最后指明了明胶检测有待提高之处,为明胶检测标准的建立提供有利参考。
Gelatin is widely used because of its unique biological macromolecular structure, which endows it with a variety of functional properties. The stability of gelatin can make it achieve the desired edible effect in the dairy production process. Based on the analysis of the combination characteristics of gelatin and dairy products, in order to quickly and accurately detect the source of gelatin, the application characteristics and development direction of different detection methods of gelatin were studied. The identification principle and research trend of various gelatin detection methods were analyzed. The advantages and disadvantages of traditional and newmo detection methods of gelatin were introduced, which has certain reference significance for gelatin detection and identification. Finally, it pointed out that the detection of gelatin needs to be improved, which can provide a good reference for the establishment of gelatin detection standard.
