生姜品质成分及姜辣素的比较 被引量:13

摘要 比较分析了恩施凤头姜、莱芜大姜等10种生姜资源的可溶性蛋白、粗纤维、干物质和姜辣素等品质成分。结果表明,供测10种生姜资源的可溶性蛋白含量为1.81~5.70 mg/g,粗纤维含量为1.60%~3.60%,抗坏血酸含量为11.2~97.1 mg/kg,干物质含量为11.34%~18.19%。采用高相液相色谱法测定得到供试生姜干样中均能检测到6种姜辣素成分,其中6-姜酚含量为4.749~8.227 mg/g,8-姜酚含量为0.810~1.399 mg/g,10-姜酚含量为0.578~1.640 mg/g,6-姜烯酚含量为0.690~1.027 mg/g,8-姜烯酚含量为0.032~0.114 mg/g,10-姜烯酚含量为0.034~0.462 mg/g。数据分析表明,不同生姜资源营养成分和功能成分存在较大差异,莱芜大姜和湖南小黄姜分别在产量和姜辣素含量上优势明显,为生姜高附加值的开发利用、品质鉴定及品种引进提供了理论依据。 The soluble protein,crude fiber,dry matter and gingerol of 10 ginger resources such as Enshi Fengtou ginger and Laiwu large ginger are compared and analyzed.The results show that the content of soluble protein,crude fiber,ascorbic acid and dry matter of the 10 kinds of ginger is 1.81~5.70 mg/g,1.60%~3.60%,11.2~97.1 mg/kg and 11.34%~18.19%respectively.High-phase liquid chromatography(HPLC)is used to determine the six gingerol components in dried ginger samples.The content of 6-gingerol is 4.749~8.227 mg/g,8-gingerol is 0.810~1.399 mg/g,and 10-gingerol is 0.578~1.640 mg/g.The content of 6-shogaol is 0.690~1.027 mg/g,8-shogaol is 0.032~0.114 mg/g,and 10-shogaol is 0.034~0.462 mg/g respectively.Data analysis results show that there are great differences in nutritional and functional components of different ginger resources.Laiwu large ginger and Hunan small yellow ginger have obvious advantages in yield and gingerol content respectively,which has provided theoretical basis for the development and utilization of high value-added ginger,quality identification and variety introduction.
