摘要
花色苷是具有多种保健功能、开发利用空间极大的天然化合物,但由于花色苷的特殊结构使其在多种环境下的稳定性受到极大影响,难以发挥出最大功效。综述了花色苷在体内外的多种重要功能,并根据花色苷稳定性研究现状,展示了多种花色苷稳态化制备方法,包括微乳化、微胶囊技术、分子辅色技术、生物转化修饰等,对促进花色苷的综合利用提供了有益参考。
Anthocyanins are a kind of natural compounds with multiple health functions,which have great space for further development and utilization.However,due to the special structure of anthocyanins,their stability in a variety of environments are greatly affected,and it is difficult to play the maximum role.In this paper,a variety of important functions of anthocyanins in vivo and in vitro were reviewed,and a variety of stabilization maintenance methods of anthocyanins were presented according to its research status.These techniques included microemulsification,microencapsulation,molecular co-pigmentation technology,and biotransformation modification,etc.Which provided useful references for promoting the comprehensive utilization of anthocyanins.
