摘要
本文采用聚合酶链反应-变性梯度凝胶电泳(PCR-DGGE)技术对浓香型白酒大曲生产过程中细菌和真菌群落的多样性进行了研究。结果表明,16S rDNA的条带数、优势度、多样性和相似性在DGGE模式中明显不同,反映了不同阶段存在的细菌群落的广泛多样性。
In this paper,polymerase chain reaction-denaturing gradient gel electrophoresis(PCR-DGGE)technology was used to study the diversity of bacterial and fungal communities during the production of Luzhou-flavor liquor,Daqu.The results showed that the number of bands,dominance,diversity and similarity of 16S rDNA were significantly different in the DGGE model,reflecting the wide diversity of bacterial communities at different stages.
