摘要
目前国内外果蔬破碎分离类产品匮乏,为满足西瓜汁工业化生产需要,研制了一款西瓜破碎分离机,能够实现西瓜的破碎分离。以破碎辊转速、皮瓤分离辊转速、籽瓤分离辊转速为试验因素,以皮中含瓤率和籽中含瓤率为试验指标,进行单因素试验。试验结果表明,当破碎辊的转速小于160 r/min时,并不能将完整的西瓜进行破碎,当破碎辊的转速为180 r/min时,皮中含瓤率为12%,籽中含瓤率为16%,皮瓤分离辊的转速为45 r/min时,皮中含瓤率为21%,籽中含瓤率为25%,籽瓤分离辊的转速为115 r/min,籽中含瓤率为12%。西瓜破碎分离机能够实现西瓜的破碎分离,完成西瓜汁的产业化发展。
In view of the current shortage of crushing and separation products for fruits and vegetables at home and abroad,to realize the industrial production of watermelon juice,a watermelon crushing separator was developed to realize the crushing and separation of watermelons.The speed of crushing roller,skin and pulp separation roller,and seed and pulp separation roller were used as the test factors,and the ratio of the crumb content in the skin and the crumb content in the seed were used as the test indicators to conduct a single factor test.The test results show that when the rotating speed of the crushing roller is less than 160 r/min,the whole watermelon cannot be crushed.When the rotating speed of the crushing roller is 180 r/min,the crumb content in the skin is 12%,and the crumb content in the seeds is 16%.When the rotation speed of the skin and pulp separation roller is 45 r/min,the crumb content in the skin is 21%,the crumb content in the seeds is 25%.When the speed of the seed and pulp separation roller is 115 r/min,the crumb content in the seeds is 12%.The watermelon crushing separator can realize the crushing and separation of watermelons and complete the industrial development of watermelon juice.
