摘要
D-阿洛酮糖(D-psicose或D-allulose)是一种零热量的功能性稀少糖,具有控血糖、保护胰岛、抗氧化等诸多功效。在广泛调研的基础上,本文总结了D-阿洛酮糖的理化性质,生产关键酶D阿洛酮糖3差向异构酶(D-psicose 3-epimerase,DPE)和D-塔格糖3-差向异构酶(D-tagatose 3-epimerase,DTE)的研究进展,探讨了生物法合成D-阿洛酮糖的工艺方法,分子手段改造DPE和DTE的研究成果以及D-阿洛酮糖的分离纯化方法,并就当前D阿洛酮糖的研究现状与发展前景进行了展望。
D-psicose(or D-allulose)is a functional rare sugar with zero calorie,and has numerous functions such as controlling blood sugar levels,antioxidation,and protecting islet cells,etc.On the basis of extensive research,we summarize the physicochemical properties of D-psicose and the discovery of D-psicose 3-epimerase(DPE)and D-tagatose 3-epimerase(DTE)that catalyze the production of D-psicose.The biosynthesis technique for D-psicose by using DPE and DTE,as well as the separation and purification of D-psicose are included.The current research progress and future prospect of D-psicose are also discussed.
