摘要
文章基于消费者对地摊美食的需求,采用问卷调查与分析的方法,对饮食风俗、烹饪原料、美食口味、烹调方法、菜肴质感、食品安全等六要素进行了调查研究,以不同背景样本类别,包括性别、年龄、月收入、学历和职业等对地摊美食要素指标进行了方差分析,以探讨消费者对于地摊美食要素指标态度上的差异性,并对差异性需求提出解决策略,为地摊美食推广及创新提供了理论依据。
Based on consumers’demand for stall food,this paper uses the method of questionnaire survey and analysis to investigate and study the six elements of food customs:cooking raw materials,food taste,cooking methods,food texture and food safety.This research involves different background sample categories,including gender,age,monthly income education and occupation,to do variance analysis to explore the differences in consumers’attitudes towards the food element indicators.Solutions are proposed for the differential needs,which provides a theoretical basis for the promotion and innovation of the stall food.
