摘要
糕点类食品深受消费者喜爱,但其食品质量安全问题也层出不穷。作者从国家市场监督管理总局官网收集了2018年至2020年上半年间的糕点类食品安全抽检的相关数据,在对其安全状况总体分析的基础上,着重从生物性污染和化学性污染两方面分析了糕点类食品安全问题的原因,指出生物性污染是其安全问题的主要原因,最后对生产到销售过程中的安全控制提出相应的风险控制建议。本研究可为糕点类食品的安全控制提供一定的参考。
Pastry food is loved by consumers,but its food quality and safety problems also emerge in an endless stream.The author collected the related data of the pastry food safety sampling from the state administration of market supervision and management of website between 2018 to the first half of 2020.On the basis of the analysis on the general security situation,the author focusing on two aspects,biological and chemical pollution,analyzes the pastry food safety problems and points out that the biological pollution is a major cause of its security problems.Finally,the corresponding risk controlling suggestions are put forward for the safety control from production to sales.This study can provide some reference for the safety control of pastry food.
