一款低度养生酒的研制

摘要 研制出一款低度养生酒。以中药材为特色材料,应用超声提取、超声催陈、膜分离等生产技术生产一款低度养生酒;通过响应面分析法确定药材有效成分最佳超声提取条件,通过感官评定确定药材浸膏与白酒的最佳配比。结果表明:最佳超声提取条件为酒精浓度55.91%vol、料液比1∶9.12、超声温度55℃、超声时间20 min,药材浸膏与白酒的最佳配比为1∶40(g/mL);制得的低度养生酒具有滋肝益肾、补血养心、定志安神的功效;酒体呈棕黄色,光泽度高,透明度好;酒香与药香协调;口感细腻柔顺,微甜。采用的超声提取、超声催陈、膜分离等养生酒生产技术具有操作简便、效率高,节约成本等特点,值得推广应用。 In this study we developed a kind of low-alcohol healthcare liqueur with traditional Chinese herbs by using ultrasonic extraction technology,ultrasonic aging technology,and membrane separation technology.The best ultrasonic extraction conditions were optimized by response surface methodology.The best extraction-Baijiu ratio was determined through sensory evaluation.The results showed that the optimal ultrasonic extraction conditions were as follows:the alcohol concentration was 55.91%vol,the material-liquid ratio was 1∶9.12,the ultrasonic extraction temperature was 55℃,and the ultrasonic extraction time was 20 min.The best extraction-Baijiu ratio was 1∶40(g/mL).The produced healthcare liqueur had the functions of nourishing liver and kidney,replenishing blood,nourishing heart,and calming nerves.The liquor body was brown,clear and transparent,had harmonious aroma,silky mouthfeel,and subtle sweetness.The production techniques were simple,efficient,and cost saving,and had good application prospect.
