某市市售部分食品中铝残留及其居民膳食暴露风险评估分析 被引量:5

Analysis of aluminum residue in some market-sold foods in a city and assessment of dietary exposure risk

摘要 目的分析某市市售部分食品铝残留并对其居民膳食暴露风险进行评估。方法根据浙江省微量有毒化学物健康风险评估技术研究重点实验室检测结果和2008年居民营养状况调查数据中相应食品膳食消费量相关数据进行铝膳食暴露评估。结果食品样本铝元素总检出率为93.16%(804/863),即食海蜇、油条和粉丝样品铝含量超标率分别为53.13%(17/32)、18.68%(48/257)和9.52%(4/42);仅0.46%的高暴露人群每千克体质量铝摄入量接近或超过2 mg;P99高暴露居民膳食铝贡献前3位的食品种类是即食海蜇、粉丝和生湿面制品。结论该市部分食品存在铝元素检出和超标现象,但其对居民铝膳食暴露风险较低。 Objective To analyze the aluminum residue in some market-sold foods in a city and the assessment of the dietary exposure risk.Methods The dietary exposure risk was assessed according to the results of the key laboratory for health risk assessment of trace toxic chemicals in Zhejiang Province and the corresponding food consumption data in 2008.Results The total detection rate of aluminum in food samples was 93.16%(804/863).The over-standard rates of aluminum content in instant jellyfish,fried dough sticks and vermicelli were 53.13%(17/32),18.68%(48/257)and 9.52%(4/42),respectively.Only 0.46%of the high exposure population had aluminum intake close to or more than 2 mg/(kg·BW).The top three food types of P99 high exposure residents􀆳dietary aluminum were jellyfish,bean vermicelli and raw wet flour product.Conclusion Aluminum in some foods sold in this city has been detected and some of them exceed the national hygienic standard,but the risk of aluminum exposure to residents is low.
