摘要
缩合单宁是广泛存在于自然界的一类多酚聚合物,具有抗氧化、抗菌、抗炎、抗寄生虫等生物活性。目前关于缩合单宁生物活性的研究较多,但其化学结构及构效关系的研究仍相当缺乏。缩合单宁的分子聚合度、结构单元组成、连接类型等结构特征对其抗氧化能力、蛋白质沉淀能力、营养物质调控作用及动物健康等具有一定的影响。文章综述了缩合单宁的化学结构、生物活性及构效关系的研究进展,以期为更好地利用缩合单宁资源提供参考。
Condensed tannin is a kind of polyphenol polymer widely distributed in nature,which have many physiological effects,such as antioxidation,anti-inflammation,antimicrobial and anti-parasite activities.Even though the bioactivities of condensed tannins have been well reported,researches on their chemical structure as well as the relationship between structure and biological functions of condensed tannins still remain scarce.The structural characteristics of condensed tannins,such as molecular polymerization degree,structural unit composition and connection type,have certain effects on its antioxidant capacity,protein precipitation capacity,nutrient regulation and animal health.In this paper,the research progresses of chemical structure,biological activity and structure relationship of condensed tannins were reviewed to provide references for better utilization of condensed tannins resources.
