摘要
红枣渣中具有丰富的可溶性膳食纤维,它含有氨基酸、多糖、矿物质成分和微量元素等多种人体可以吸收利用的物质,也含有维生素、黄酮和生物碱等多种生物活性物质,具有抗氧化和抗疲劳等多种生物学功能。该研究通过对红枣渣可溶性膳食纤维改性工艺进行探究,获得红枣渣可溶性膳食纤维改性的最佳加工工艺为:红枣渣颗粒大小为40~80目;料液比为1∶10;纤维素酶的添加量为0.6%;同时将红枣渣和维生素C对DPPH自由基的清除率进行比较,发现虽然红枣渣可溶性膳食纤维具有一定的抗氧化活性,但是远远低于维生素C的抗氧化活性。
Jujube residue is rich in soluble dietary fiber,which contains amino acids,polysaccharides,mineral components,trace elements and other substances that can be absorbed and used by the human body,it also contains vitamins,flavonoids and alkaloids and other biological active substances,has anti-oxidation and anti-fatigue and other biological functions.In this study,the modification process of soluble dietary fiber from jujube residue is explored,and the optimal processing process of modification of soluble dietary fiber from jujube residue is as follows:the particle size of jujube residue is 40~80 mesh,the ratio of solid to liquid is 1∶10,the cellulase content is 0.6%,at the same time,the DPPH free radical scavenging rate of jujube residue and vitamin C is compared.It is found that although soluble dietary fiber from jujube residue has certain antioxidant activity,it is far lower than that of vitamin C.
