摘要
目的:比较血红素铁数据库和动物性铁估算法评估大学生铁营养状况的差异,为大学生膳食铁营养状况评价提供科学依据。方法:采用3 d 24 h膳食回顾法进行膳食调查,利用血红素铁数据库计算调查对象的血红素铁摄入量,同时用动物性铁估算法估算血红素铁摄入量,对两种方法的评价结果进行比较。结果:按动物性铁40%估算,女大学生血红素铁摄入量为0.85 mg/d;按血红素铁数据库计算,女大学生血红素铁摄入量为0.62 mg/d。估算法得到的血红素铁摄入值高于血红素铁数据库计算值(P<0.05)。结论:在评估大学生铁营养状况时,用动物性铁的40%进行估算会使血红素铁摄入量被高估,应根据肉的种类及部位,使用血红素铁数据库进行评估。
【Objective】To compare the differences of heme iron database and Animal Iron Estimation Method in evaluating the nutritional status of female university students,and provide reference for the evaluation of dietary iron nutrition status of college students.【Method】24-hour Dietary Recall for 3 days was used to survey dietary intake,the heme iron database was used to calculate heme iron intake of the objects,meanwhile animal iron estimation method was used to estimate the heme iron intake,then the evaluation results of the two methods were compared.【Result】According to animal iron estimation method,the female students’iron intake was 0.85 mg/d,and according to the heme iron database the intake was 0.62 mg/d.The heme iron value by the estimation method was higher than that of heme iron database(P<0.05).【Conclusion】Heme iron intake can be overvalued by animal iron estimation method,heme iron database is more suitable for evaluating iron nutritional status of university students.
