摘要
以茉莉花茶为原料,通过添加冠突散囊菌(俗称"金花")发酵液制备了"金花"茉莉花茶;采用纤维素酶辅助提取"金花"茉莉花茶中的茶多糖(tea polysaccharide,TPS),并通过单因素和正交试验研究酶解时间、酶解温度、酶添加量对"金花"茉莉花茶中茶多糖提取效率的影响,获得了最佳提取工艺条件;进一步用1,2-二苯基-2-苦肼基(DPPH)考察了"金花"茉莉花中的茶多糖对DPPH自由基的清除作用.结果表明:当酶解时间为120 min,酶解温度为50℃和酶添加量为3%时,从"金花"茉莉花茶中提取茶多糖的效率最高,达104.25 mg/g;在抗氧化活性方面,相对于从茉莉花茶中提取的茶多糖,从"金花"茉莉花茶中提取的茶多糖对DPPH表现出了更好的清除作用.
In this paper,“Jinhua”jasmine tea was prepared from jasmine tea with fermentation broth of Eurotium Cristatum(commonly known as“Jinhua”),and cellulase was used to assist the extraction of tea polysaccharides in“Jinhua”jasmine tea.Single factor and orthogonal experiments were used to study the effects of enzymolysis time,enzymolysis temperature,and enzyme addition on the extraction efficiency of tea polysaccharides in“Jinhua”jasmine tea,and the optimal extraction process conditions were obtained.Furthermore,1,2-diphenyl-2-picrylhydrazyl(DPPH)was used to investigate the scavenging effect of tea polysaccharides in“Jinhua”jasmine on DPPH free radicals.The results showed that when the enzymatic hydrolysis time was 120 min,the enzymatic hydrolysis temperature was 50℃,and the amount of enzyme was 3%,the extraction efficiency of tea polysaccharides from“Jinhua”jasmine tea was the highest,up to 104.25 mg/g.In terms of antioxidant activity,compared with the tea polysaccharides extracted from jasmine tea,the tea polysaccharides extracted from“Jinhua”jasmine tea showed better scavenging effect on DPPH.
