迷迭香提取物对薏仁米贮藏过程中油脂氧化的影响

Effect of Rosemary Extract on the Oil Oxidation of Coix Seed During Storage

为探究迷迭香提取物对薏仁米贮藏过程中油脂氧化的影响,分别采用自封袋和添加迷迭香提取物的自封袋包装薏仁米,并在30 ℃下贮藏4个月,分析2种包装贮藏过程中脂肪酸值、过氧化值、丙二醛含量和脂肪氧化相关酶活性等指标的变化规律。结果表明,与自封袋组相比,贮藏4个月后的迷迭香提取物组中脂肪酸值、过氧化值、丙二醛含量、脂肪酶活性和脂肪氧化酶活性分别降低了24.15%、28.92%、38.36%、15.98%和32.07%,说明迷迭香提取物可以有效抑制薏仁米的油脂氧化。此外,根据脂肪酸组成的测定结果可知,迷迭香提取物有利于减缓薏仁米中多不饱和脂肪酸的氧化速率。研究结果证明迷迭香提取物具有较好的抗脂质氧化活性,并可以有效抑制薏仁米贮藏过程中的油脂氧化。

In order to explore the effect of rosemary extract on the changes of oil oxidation index of coix seed during storage,the coix seed was packaged in self-sealing bags and self-sealing bags with rosemary extract,and stored at 30 ℃ for 4 months.During storage,the changes of fatty acid value,peroxide value,malondialdehyde content and lipid oxidation-related enzyme activity were analyzed in two kinds of packaging.The results showed that compared with the self-sealing bags group,fatty acid value,peroxide value,malondialdehyde content,lipase activity and lipoxygenase activity were reduced by 24.15%,28.92%,38.36%,15.98% and 32.07% in the rosemary extract group after 4 months of storage,respectively,indicating that rosemary extract could effectively inhibit the oil oxidation of coix seed.In addition,according to the results of fatty acids composition,it can be known that rosemary extract is beneficial to slow down the oxidation rate of polyunsaturated fatty acids in coix seed.This study confirmed that rosemary extract has good anti-lipid oxidation activity,it can effectively inhibit the oxidation of oil during storage of coix seed.
