摘要
为分析冰鲜鸡腐败过程中微生物变化,筛选冰鲜鸡腐败相关菌群,研究利用16 S rRNA测序技术分析了保存1、3、5和7 d冰鲜鸡样本微生物组成和多样性,利用正交偏最小二乘法回归和逐步多元回归分析筛选与冰鲜鸡腐败相关的菌属。结果显示:冰鲜鸡腐败过程中微生物丰富度和均匀度均显著下降,保存5 d和7 d样本与保存1 d和3 d样本微生物组成存在显著差异,4 d可能为冰鲜鸡腐败变质的临界点;筛选到27个冰鲜鸡腐败相关的候选菌属,其中肉食杆菌属、沙雷氏菌属和发光杆菌属可能为引起冰鲜鸡腐败变质的优势菌属。研究结果有助于加深对冰鲜鸡腐败变质机理的理解。
To analyze the microbial changes of chilled chicken during the spoilage and screen spoilage related bacteria,16 S rRNA sequencing was used to analyze the microbial composition and diversity of chilled chicken samples stored for 1,3,5 and 7 days.Orthogonal partial least squares regression analysis and stepwise multiple regression analysis were used to screen the bacteria related to the spoilage of chilled chicken.The results showed that the microbial richness and evenness decreased significantly during the spoilage of chilled chicken.There was a significant difference in microbial composition between the samples stored for 5 and 7 days and the samples stored for 1 and 3 days.Four days may be the critical point of spoilage of chilled chicken.A total of 27 candidate genera related to spoilage of chilled chicken were identified,among which Carnobacterium,Serratia,and Photobacterium might be the dominant genera causing spoilage of chilled chicken.The above findings would help to enhance the understanding of spoilage mechanism of chilled chicken.
