摘要 非降解型传统塑料的广泛使用大大提高了人们的生活水平,但由此造成的地球生态环境危机和石油资源枯竭却直接威胁着人类社会的可持续发展,因此,以天然可再生资源为基础的环保型聚合物来代替传统塑料越来越受到人们的重视。大豆分离蛋白(SPI)是一种具有可再生性和可生物降解性、生物相容性好、成膜能力良好、可加工性好的蛋白质,在食品工业、农业和生物科学等领域具有重要的应用前景。本文综述了以SPI为基材的食品包装材料的最新研究进展,重点介绍了国内外在其力学性能、阻隔性能和抗菌性能方面研究进展,详细讨论了SPI材料在食品保鲜和包装技术方面的应用范例,最后提出了SPI包装材料的未来研究方向。 The widespread use of traditional non-biodegradable plastics has greatly promoted people’s living standards but thence has caused the earth ecological environment crisis and fossil resource depletion which directly threaten the sustainable development of human society. Therefore, environment-friendly polymers based on natural and renewable resources to replace traditional plastics are getting more and more attention. From this regard, soybean protein isolate(SPI) as a kind of protein with renewable resources, good biocompatibility, biodegradation, good film-forming ability and good processability, has important application prospects in food industry, agriculture and biological science. In this review, the recent research progress on SPI-based food packaging materials has revisited, with emphasis on the advances in mechanical properties, barrier properties and antibacterial properties. The application examples of SPI materials in food preservation and packaging technology were discussed in detail. Finally, the future research and development prospect of SPI packaging materials has been proposed.
