摘要
广东省实施"粤菜师傅"工程以来,广东省人社厅联合相关部门和餐饮行业协会,加快开发完善粤菜菜品标准体系,建立健全"粤菜师傅"相关职业资格评价、职业技能等级认定、省级专项职业能力考核、地方系列菜品烹饪专项能力考核等多层次评价体系,支持设立以粤菜师傅培养为主的职业院校、技工院校发展。本文探讨了实施"粤菜师傅"工程对广东省烹饪职业教育的影响。
Since the implementation of the “Cantonese Cuisine Master” project in Guangdong Province, the department of human resources and Social Security Department of Guangdong Province, in conjunction with relevant departments and catering industry associations, has accelerated the development and improvement of the Cantonese cuisine standard system, and established and improved a multi-level evaluation system such as “Cantonese Cuisine Master” related professional qualification evaluation, vocational skill level identification, provincial special professional ability assessment, and local series cuisine special ability assessment, support the establishment of vocational colleges and technical colleges focusing on the cultivation of Cantonese cuisine masters. This article discusses the impact of the “Cantonese Cuisine Master” project on Guangdong’s culinary vocational education.
