本文分析了目前食品安全领域中常见的重金属种类及其来源,并对现有的重金属检测方法进行了论述,包括原子吸收光谱法、分光光度法、试剂比色检测法、原子荧光光谱法和电感耦合等离子体质谱法,且对不同检测方法进行了对比分析,以供实际食品安全监管工作中,根据检测对象的特点选择适当的检测方法。

In this paper,the common types and sources of heavy metals in the field of food safety were analyzed,and the existing detection methods of heavy metals were discussed,including atomic absorption spectroscopy,ultraviolet visible spectrophotometer,reagent colorimetric method,atomic fluorescence spectroscopy and inductively coupled plasma mass spectrometry,and different detection methods are compared and analyzed,so as to select appropriate detection methods according to the characteristics of detection objects in actual food safety supervision.
