富硒红曲苦荞酸奶的研制 被引量:2

摘要 为研制富硒红曲苦荞酸奶,以苦荞、大米为原料,加入亚硒酸钠溶液并接种红曲霉菌种,经发酵制成富硒红曲苦荞米,再将其加入酸奶中制成富硒红曲苦荞酸奶。结果表明,在苦荞米添加量60.0%,亚硒酸钠溶液添加量3.0%,发酵时间40 d的条件下培养富硒红曲苦荞米,按0.8%加入酸奶中,制作的产品色泽诱人、酸甜适口,有机硒含量达76.0μg/100 g。 In order to prepare selenium-enriched monascus tartary buckwheat yogurt,with tartary buckwheat rice and rice as raw materials,sodium selenite solution was added and inoculated with monascus,which was fermented and cultured into selenium-rich monascus tartary buckwheat rice,and then it was added into yogurt to make selenium-rich monascus tartary buckwheat yogurt.The results showed that the monascus rice of selenium-rich tartary buckwheat was cultured under the conditions of 60.0%of tartary buckwheat rice,3.0%of sodium selenite solution,and fermentation time of 40 days,and then added into the yogurt according to 0.8%.The product was made of attractive color,sweet and sour taste,and the organic selenium content reached 76.0μg/100 g.
