钙离子交联对蓝莓色素乳液水凝胶微粒的影响

摘要 制备蓝莓色素乳液,在此基础上构建蓝莓色素乳液水凝胶微粒,采用锐孔法通过加入适量的Ca^(2+)进行交联,提高蓝莓色素水凝胶微粒的包埋率。研究不同种类交联剂(L-乳酸钙、醋酸钙、葡萄糖酸钙、轻质碳酸钙、乳钙、磷酸二氢钙、氯化钙)、交联剂质量分数(3%,4%,5%,6%,7%)、复合交联剂比例(1∶1,1∶2,1∶3,1∶4,1∶5)的Ca^(2+)对蓝莓色素乳液水凝胶微粒基本性质及包埋率的影响。结果表明,醋酸钙交联时乳液水凝胶微粒不成型,葡萄糖酸钙、轻质碳酸钙、乳钙、磷酸二氢钙交联时乳液水凝胶微粒浑浊且包埋率较低,氯化钙、乳酸钙复合交联剂较单一氯化钙或乳酸钙交联效果好,质量分数均为5%,最佳比例为氯化钙∶乳酸钙=1∶3,在此条件下,钙离子水凝胶微粒的硬度、弹性最好,包埋率高达97.30%。以钙离子包埋率中钙包埋剂用量和钙包埋剂比例做两因素一次回归,回归方程为Y=1.01345-0.0005Z_(1)+0.00155Z_(2)。钙包埋剂用量为7~9 mL,钙包埋剂比例为2~4 g,方程拟合性较好,回归极显著。 Blueberry pigment emulsion was prepared,and hydrogel particles of blueberry pigment emulsion were constructed on this basis.Racehole method was used to cross link with appropriate amount of Ca^(2+)to improve the embedding rate of blueberry pigment hydrogel particles.Study different kinds of crosslinking agents(L-calcium lactate,calcium acetate,calcium gluconate,light calcium carbonate,milk calcium,calcium dihydrogen phosphate,calcium chloride),the concentration of crosslinking agent(3%,4%,5%,6%,7%),and the ratio of compound crosslinking agent(1∶1,1∶2,1∶3,1∶4,1∶5)Effects of Ca^(2+)on the basic properties and embedding efficiency of blueberry pigment emulsion hydrogel particles.The results showed that the calcium acetate crosslinked emulsion water gel particles not forming,calcium gluconate,light calcium carbonate,calcium milk,calcium dihydrogen phosphate crosslinking emulsion particles turbid water gel and the embedding rate was low,calcium chloride,calcium lactate compound crosslinking agent was relatively single calcium chloride or calcium lactate crosslinking effect was good,the concentration was 5%,the best proportion of calcium chloride,calcium lactate=1∶3.Under these conditions,the hardness and elasticity of calcium ion hydrogel particles were the best,and the embedding rate was as high as 97.30%.A two-factor regression was made by the amount of calcium embedding agent and the proportion of calcium embedding agent in the embedding rate of calcium ions,and the regression equation was Y=1.01345-0.0005Z_(1)+0.00155Z_(2).When the dosage of calcium embedding agent was 7~9 mL and the proportion of calcium embedding agent was 2~4 g,the equation fitting was good and the regression was very significant.
