控制展青霉素产生菌方法综述

摘要 我国每年生产大量水果,但是由于运输和保藏等环节处理不当,使得水果容易受到微生物侵染,微生物在损伤的水果中大量繁殖常常会导致水果制品中的展青霉素超标,对食品安全造成了严重威胁。因此需要一种安全有效的方法来抑制展青霉素的产生,与传统的防治方法相比,利用天然产物筛选有效的抑菌物质,通过生物防控从根本上抑制展青霉素是当前最具前途的防治方法之一。 A large number of fruits are produced in China every year.However,due to improper handling of transportation and preservation,fruits are vulnerable to microbial infection.Due to the proliferation of microorganisms,damaged fruits or fruit products were often exposed to patulin exceeding the standard,which poses a serious threat to food safety.Therefore,a safe and effective method was needed to inhibit the production of patulin.Compared with the traditional control methods,it is one of the most promising control methods to select effective bacteriostatic substances from the natural products,use biological control and control,and inhibit the production of patulin from the source.In this paper,the harm of patulin and its application in fruit and vegetable industry as well as the commonly used detection methods and prevention and control methods were introduced in order to provide some reference for the biological prevention and control of patulin.
