烟台小金星山楂果总黄酮含量与其感官及理化指标相关性分析

Correlation Between Content of Total Flavonoids and Indexes of Sensory and Physicochemical of Hawthorn Fruit of Variety of Xiaojinxing in Yantai Area

山楂果是保健食品的主要原料,其大小等理化特性是人们消费的主要依据,但山楂果的主要活性成分总黄酮是否与消费者的判断相一致。以烟台市小金星山楂果为材料,通过连续3年的跟踪,发现山楂果总黄酮含量与山楂果单粒重、直径、硬度等物理特征之间呈现极强的负相关性,表述为山楂果越小越硬,其总黄酮含量越高;而总黄酮与山楂果总酸、还原糖含量呈现极强的正相关性,即越酸、含糖越高,黄酮含量也越高;与山楂果汁电导率呈强的正相关;与山楂果肉核比具有中等强度相关性,但关系也不明确。

Hawthorn fruit is the main raw material of health food,and its size and other physicochemical properties are the main basis for people's consumption.However,the main active component of hawthorn fruit is total flavonoids,which is consistent with the judgment of consumers.In this paper,the results of the three years'tracking experiments were carried out on the fruit of variety of Xiaojinxing in Yantai city.The results reflected that there was a significant negative relation between the content of total flavonoids in hawthorn fruit and hawthorn fruit weight,hawthorn fruit diameter,hawthorn fruit hardness.There was a significant positive correlation between the content of total flavonoids in hawthorn fruit and the content of total acids and reducing sugar in hawthorn juice.The total flavonoid content of its fruit was a positive correlation between the conductivity of hawthorn juice.Content of total flavonoids had moderate correlation with the ratio of flesh to core of hawthorn juice,but not clear.
