摘要 食品粉体在人们的日常生活和食品加工中扮演着重要的角色,随着粉体在食品中被频繁的使用,为了满足人们使用食品粉体时的各种要求,需要了解粉体的加工方法及加工性质的各种变化,粉体加工技术被相关研究者不断研究开发。在众多的各类食品加工粉末及原料加工工艺技术中,超微粉碎技术是目前新兴的、有效的制备超微粉的一类农产品加工技术,该技术能提高加工物料的利用率、改善加工的特性、提高产品品质,使其广泛运用于食品加工行业。通过概括超微粉碎设备技术工作原理和使用特点,重点阐述了超微粉碎设备技术在各个领域中的实际使用状况,并对超微粉碎技术的发展前景研究做出重要展望,总结该技术目前应用需要亟待解决的问题。 Food powder in People's Daily life and food processing are ubiquitous in the role of powder was frequently used in food,in order to satisfy the various requirements of using food powder of people,need to understand the powder processing methods and processing properties of all kinds of changes,powder processing technology research and development by the researchers.Among all kinds of food processing powder and material processing technology,the superfine grinding technology is now emerging,effective preparation of superfine powder of agricultural products processing technology,this technology can improve the utilization rate of material processing,to improve the processing characteristics,improve the product quality,and now to make it successful is widely used in food processing industry.In this paper,the working principle and application characteristics of ultrafine grinding equipment technology were summarized,but the actual application status of ultrafine grinding equipment technology in various fields was also highlighted,and the development prospect of ultrafine grinding technology was prospected,and the problems that need to be solved urgently were summarized.
