摘要
通过测定富硒木耳水提物(AESAA)对DPPH自由基、羟自由基、超氧自由基的清除能力及还原能力,以普通木耳水提物(AEAA)作为阴性对照,维生素C(Vc)作为阳性对照,评价了AESAA的体外抗氧化能力。结果表明:AESAA对DPPH自由基、羟自由基、超氧自由基的清除能力和还原能力显著强于AEAA,但弱于Vc;且富硒木耳抗氧化活性与含硒量呈正相关。
The antioxidant capacity of aqueous extract of Se-enriched A. auricula(AESAA) in vitro was evaluated in this paper by measuring AESAA on DPPH free radicals, hydroxyl radicals, superoxide free radicals’ scavenging ability and reducing ability with the aqueous extract of A. auricula(AEAA) as a negative control and vitamin C(Vc) as a positive control. The results showed that: AESAA had stronger scavenging ability of DPPH free radicals, hydroxyl free radicals and superoxide free radicals and reducing ability than AEAA, but weaker than Vc. The antioxidant activity of AESAA was positively correlated with selenium content.
