摘要
芝麻香型是中国白酒十二大香型之一。分三个阶段梳理了芝麻香型白酒的创制背景、演变过程与发展现状;详细解析了芝麻香型白酒发展历程中的各个发展节点的重要事件;对芝麻香酿造所用主要原辅料的选料与使用进行了解析,并阐述了芝麻香白酒的应用领域与发展前景,以期为芝麻香型白酒的发展及其从业者提供一定的帮助和借鉴。
Sesame flavor is one of the 12 flavors of Chinese baijiu.In this paper,the background,evolution and development status of sesame flavor were reviewed in three stages.The important events of each development node in sesame flavor Baijiu liquor development process were analyzed in detail.The selection and application of main raw materials used in sesame flavor Baijiu brewing were analyzed,and the application fields and development prospects of sesame flavor Baijiu were expounded.Armed at providing some help and reference for the development of sesame flavor Baijiu and its practitioners.
