定量评价小曲清香型白酒典型感官特征的研究

Study on Typical Sensory Characteristics of Xiaoqu Qingxiang Xing Baijiu by Quantitative Description Analysis

为了定量评价小曲清香型白酒的感官风格特征,从而更好地进行产品质量的控制,参照国外酒类风味轮建立的方法,同时结合现有白酒风味研究,对36个不同生产日期的不同质量档次和风格的小曲清香型白酒进行感官定量评价,利用统计分析软件对小曲清香型白酒的典型感官特征进行识别和提炼,筛选出代表小曲清香型白酒感官特征的描述语,包括29个香气描述语、3个口味描述语和14个口感描述语。从颜色、清亮度、香气、口味、口感、风格6个方面绘制了小曲清香型白酒的风味轮。同时通过风味剖面图清晰地表达了3种不同档次和风格特点的小曲清香型白酒产品的风味差异,说明基于感官定量评价方法筛选出的感官特征描述语能够准确代表小曲清香型白酒的感官特征。总体来说,该研究方法使得小曲清香型白酒的感官评价更为定量化、直观化,从而更好地指导小曲清香型白酒产品的质量控制。

In order to quantitatively evaluate the sensory characteristics of Xiaoqu qingxiang xing baijiu and to better control the product quality,36 kinds of different grades and styles of Xiaoqu qingxiang xing baijiu were evaluated on the basis of liquor sensory term"flavor wheel".and combined with the research of existing Chinese liquor flavor.The terms applicable to describe sensory characteristics of Xiaoqu qingxiang xing baijiu were screened out including 29 aroma description terms,3 taste description terms and 14 mouthfeel description terms.From the five aspects of color,brightness,aroma,taste,mouthfeel and style,the flavor wheel of Xiaoqu qingxiang xing baijiu was drawn.Through the flavor profile,the flavor difference of the three kinds of different grades and styles of Xiaoqu qingxiang xing baijiu is clearly and intuitively expressed.It is indicated that the sensory feature descriptors screened based on the flavor wheel principle can accurately represent the sensory characteristics of Xiaoqu qingxiang xing baijiu.In general,the research method makes the sensory evaluation of Xiaoqu qingxiang xing baijiu more quantitative and intuitive,thus better guiding the quality control of Xiaoqu qingxiang xing baijiu.
