市售雷山银球茶品质特征分析 被引量:2

摘要 本文以21个雷山银球茶茶样作为试验对象,对其进行生化成分测定和茶叶感官审评。结果表明:所测茶样直径均符合雷山银球茶地理标准,76.2%茶样净重符合雷山银球茶地方标准;样品感官审评总分范围在84.5~90.4分,平均值为88.06分,滋味上体现出茶汤鲜、浓的品质特征;主要品质特征成分分别为含水量4.43%、水浸出物55.15%、茶多酚17.35%、游离氨基酸4.70%、酚氨比3.69、咖啡因2.19%;水浸出物含量优于国家绿茶标准;含水量控制较好,利于贮存。 In this paper,21 Leishan Yinqiu Tea samples were used as experimental objects for the determination of biochemical components and sensory evaluation.The results showed that the diameters of the tested tea samples all met the Leishan Yinqiu Tea geographical standard,and 76.2%of the tea samples′net weight met the Leishan Yinqiu Tea local standard.The total sensory evaluation scores of the samples ranged from 84.5 to 90.4,with an average of 88.06.The taste of tea infusion was fresh and strong.The average contents of main quality characteristic components were water content 4.43%,water extract 55.15%,tea polyphenols 17.35%,free amino acids 4.70%,tea polyphenols to amino acids 3.69 and caffeine 2.19%.The content of water extract was better than that of the national green tea standard,and the water content was well controlled for storage.
