摘要 特殊医学用途配方食品(特医食品)逐渐成为食品发展的朝阳产业,其对营养缺乏或特殊患病人群的作用日益凸显。提高特医食品生物利用率及加工适应性是特医食品发展的重要方向。超微粉碎技术能改善食品粉体的分散性、吸附性、溶解性、化学活性及生物活性等,适用于特医食品的开发。本文针对特医食品的分类组成及产业的发展、超微粉碎技术及其在特医食品中的应用前景等展开了综述,为特医食品的开发提供信息资源及发展思路。 Formula for special medical use(special medical food)has gradually become the sunrise industry of food development,and its role in nutritional deficiency or special diseases is increasingly prominent.To improve the bioavailability and processing adaptability of special medical food has become an important direction of the development of special medical food.Ultramicrogrinding technology is suitable for the development and utilization of special medical food field because it can make food have good dispersibility,adsorption,solubility,chemical activity,biological activity and so on.In this paper,the classification and industrial development of special medical food,ultrafine grinding technology and application prospect of formula food for special medical purposes were reviewed,so as to provide literature information resources and new development ideas for special medical food development.
