摘要
海参胶原蛋白不仅纯度高,而且富含其他海洋生物胶原蛋白所不具备的海参多糖、海参皂甙以及18种氨基酸等稀有营养成分。从海参中提取胶原蛋白及其水解物的方法有酶法、酸法、碱法、酶与碱结合和酶与酸结合等方法。本文综述了海参胶原蛋白提取及其生物活性等方面的研究进展,期望为海参胶原蛋白的进一步开发利用提供参考。
Sea cucumber collagen is not only high purity,but also rich in sea cucumber polysaccharides,sea cucumber saponins and 18 kinds of amino acids,which are not found in other marine collagens.Collagen is extracted from sea cucumbers.The methods of protein and its hydrolysate include enzymatic method,acid method,alkali method,combination of enzyme and alkali,and combination of acid and enzyme.The research progress on the extraction and biological activity of sea cucumber collagen is reviewed,in order to provide a reference for the further development and utilization of sea cucumber collagen.
