Research Progress in the Application of Chitosan Adsorbents in Food

壳聚糖因其特殊的分子结构和无害性而具有被开发为食品用吸附剂的前景,本文主要综述了壳聚糖的改性及吸附剂的制备方法对壳聚糖类吸附剂吸附性能的影响,并对近年来壳聚糖类吸附剂在食品中一系列应用研究进展进行总结,以期为相关人员提供参考。

Chitosan because of its special molecular structure and harmlessness and has being developed for food with the prospect of the adsorbent,this article mainly reviews the modification of chitosan and the adsorbent of preparation methods of chitosan adsorbent adsorption performance,and summarized the research progress of a series of applications of chitosan adsorbents in food in recent years,hoping to provide reference for relevant personnel.
