归纳了玛咖中发现的芥子油苷的种类,芥子油苷的提取、纯化、鉴别及定量分析方法;阐述了芥子油苷的降解过程、降解产物及影响降解过程的因素;介绍了芥子油苷及其降解产物的生理活性。该文以期为玛咖中芥子油苷及其降解过程的深入研究提供参考。
Glucosinolates are a kind of important sulfur-containing secondary metabolites in Maca(Lepidium meyenii Walp.).Summarize the type,extraction,purification,discrimination and quantitative method of glucosinolates in Maca.Discuss the degradation process,degradation product and influential factors of degradation process of glucosinolates.Introduce the physiological activity of glucosinolates and their degradation product.The future research area of glucosinolates and their degradation product are concluded.Some references for the future study of glucosinolates and their degradation in Maca are provided.
