短时高压电场处理对萌发甜荞γ-氨基丁酸积累的影响 被引量:1

Effects of Short Time-High Voltage Electric Field Treatment on the Accumulation of γ-Aminobutyric Acid in Germinated Buckwheat

摘要 试验通过短时高压电场处理提高甜荞萌发后γ-氨基丁酸(γ-aminobutyric acid, GABA)含量,并对GABA支路相关酶活性进行测定。结果表明:对照组中甜荞GABA含量达到(184.38±0.46)mg/100 g,高压电场处理后甜荞中GABA含量可达到(195.49±0.81)mg/100g,显著高于对照组(P<0.05)。与对照组相比较,高压电场处理可以显著提高甜荞中谷氨酸脱羧酶(glutamic acid decarboxylase,GAD)活性(P<0.05)、抑制琥珀酸半醛脱氢酶(succinic semialdehyde dehydrogenase,SSADH)活性(P<0.05),GABA转氨酶(GABAtransaminase,GABA-T)活性先提高、后降低。短时高压电场处理可以通过影响与GABA支路有关酶类活性来达到富集萌发甜荞中GABA的目的。 The short-time high-voltage electric field treatment was used to increase the GABA content of buckwheat after germination, and the activities of GABA shunt enzymes were measured. The results showed that buckwheat was soaked at 35 ℃ for 3 hours, after treatment with 1.0 KV/cm high-voltage electric field for 30 minutes. The buckwheat were incubated at 25 ℃ and 80% humidity for 24 hours. The content of GABA in the control group was(184.38 ± 0.46) mg/100 g, and the content of GABA in the treated group was(195.49 ± 0.81) mg/100 g, which was higher than that in the control group(P<0.05). Compared with the control group, high voltage field treatment significantly increased the activities of glutamic acid decarboxylase(GAD)(P<0.05), inhibited the activities of succinic semialdehyde dehydrogenase(SSADH)(P<0.05), and increased and then decreased the activities of GABA transaminase(GABA-T). Short-time high-voltage electric field treatment can enrich GABA in germinating sweet buckwheat by affecting the activities of GABA shunt enzymes.
