摘要
目的对江苏省常见的蔬菜和水果的主要营养成分进行分析,为掌握江苏省食物营养成分现状及规律提供科学依据。方法2018—2019年采集江苏常见的28种蔬菜及19种水果样品共423份进行能量、蛋白质、脂肪、碳水化合物、维生素和矿物质等营养成分分析和评价。结果与以往相比,本次监测的大部分营养成分含量较高的蔬菜和水果一般营养成分含量有所降低,但维生素和矿物质含量有所上升。结论建立江苏省蔬菜和水果食物成分数据库,为营养工作和指导居民合理膳食提供数据支持。居民在摄入充足的蔬菜水果的同时,还应摄入多种多样的食物,保证平衡膳食。
Objective To analyze the main nutritional components of common vegetable and fruit in Jiangsu Province,provide scientific evidence for mastering the current situation and law of food nutritional components in Jiangsu Province.Methods A total of 423 samples of 28 kinds of vegetables and 19 kinds of fruits were collected in Jiangsu Province from 2018-2019,to carry out the nutritional component analysis and evaluation,which included energy,protein,fat,carbohydrate,vitamins and mineral substance.Results Compared with the past,the general nutrient content of most vegetables and fruits with high nutrient content decreased in this monitoring,but the vitamin and mineral content increased.Conclusion The database of food composition of vegetables and fruits in Jiangsu Province is established to provide data support for nutrition work and reasonable diet guidance.Residents should not only eat enough fruits and vegetables,but also a variety of food to ensure a balanced diet.
