摘要
鸡内金、焦山楂是具有促消化作用的药食同源物质,在单因素试验基础上,设计正交试验对消食饼干配方进行优化。结果表明:消食饼干的最佳配方为低筋面粉50 g、小麦胚芽粉20 g、黄油30 g、糖粉30 g、鸡内金粉5 g、焦山楂粉1 g、盐0.8 g、鸡蛋液50 g、酵母粉0.2 g、牛奶60 g;最佳烘烤条件为温度110℃、烘烤时间25 min。在此条件下制作的消食饼干口感酥脆、色泽饱满、外形完整。
Endothelium Corneum Gigeriae Galli and Charred fructus Crataegi were drug and food homologous substances with promoting digestion. On the basis of single factor test,orthogonal test was designed to optimize the formula of digestion biscuit. The results showed that the best formula of digestion biscuit was low gluten flour 50 g,wheat germ powder 20 g,butter 30 g,sugar powder 30 g,Endothelium Corneum Gigeriae Galli powder 5 g,Charred fructus Crataegi powder 1 g,salt 0. 8 g,egg liquid 50 g,yeast powder 0. 2 g and milk 60 g;The best baking conditions were temperature 110 ℃ and baking time25 min. Under these conditions,the digestion biscuit has crisp taste,full color and complete shape.
