摘要 目的:利用分光光度计法测定某市部分超市、小作坊销售的面制品中铝含量,为食品安全监管部门提供科学依据。方法:参考《食品安全国家标准食品添加剂使用标准》(GB 2760—2014)方法,样品经消化处理后,以铬天青S为显色剂,在乙二胺-盐酸缓冲溶液中进行显色反应,结合紫外分光光度计准确测定铝的含量。结果:本法线性良好,线性范围0.086~0.658μg/mL,相关系数达0.9988,回收率为96.9%~109.8%,相对标准偏差为0.6885%、0.9099%。实际检测样品中,有8份样品检出铝含量超标,其含量在108~155 mg/kg。结论:该方法简单、回收率高、准确、可靠,可适用于面制品中铝的检测,有利于监测全市食品质量安全风险隐患。 Objective:to determine the aluminum content in flour products sold in some supermarkets and small workshops by spectrophotometry,so as to provide scientific basis for food safety supervision department.Methods:referring to“national food safety standard for the use of food additives”GB 2760-2014,the sample was digested,and the color reaction was carried out in ethylenediamine hydrochloric acid buffer solution with chrome azurol S as chromogenic agent,and the content of aluminum was accurately determined by UV spectrophotometry.Results:the linear range was 0.086~0.658μg/mL,the correlation coefficient was 0.9988,the recovery was 96.9%~109.8%,and the relative standard deviation was 0.6885%and 0.9099%.In the actual detection samples,8 samples were found to have excessive aluminum content,and the content was between 108~155 mg/kg.Conclusion:the method is simple,high recovery,accurate and reliable.It can be applied to the detection of aluminum in flour products and is conducive to monitoring the potential risks of food quality and safety in the whole city.
