重点养殖水产品质量安全风险分析总论

Summary of Risk Analysis on the Quality and Safety of Key Aquatic Products

为进一步掌握中国重点养殖水产品质量安全风险隐患现状,加强水产品质量安全监管,提高突发事件应对能力,本研究针对近十年生产和出口贸易量较大、产业化程度高、影响范围广的重点品种和部分消费者敏感度较高的水产品,包括大宗淡水鱼、海水鱼、特色淡水鱼、虾蟹类、贝类及藻类等6大类重点品种,排查环节涵盖水产苗种、渔用药物、渔用饲料、水产养殖环境、生物毒素、生物危害和流通运输等。通过对重点养殖水产品存在的质量安全风险隐患及其危害进行研究分析,提出了相应对策和建议。总体而言,水产品质量安全水平保持了稳定向好的势头,食用安全得到了有效保证。

In order to further grasp the current status of hidden dangers in the quality and safety of important aquatic products in China,strengthen the supervision of the quality and safety of aquatic products and improve the ability to respond to emergencies,the research was carried out based on six major categories with large production and export trade volume,high degree of industrialization,and wide impact in the past 10 years,and some aquatic products with high consumption sensitivity,including bulk freshwater fish,marine fish,specialty freshwater fish,shrimps and crabs,shellfish and algae,etc.The investigation process covered aquatic seedlings,fishery drugs,fish feed,aquaculture environment,biological toxins,biological hazards,circulation and transportation,etc.Through the research and analysis of the hidden dangers and hazards of the quality and safety of important aquatic products,the corresponding countermeasures and suggestions have been put forward.In general,the quality and safety of aquatic products has maintained a steady and positive momentum,and the food safety has been effectively guaranteed.
