碳中和目标下夜市鸡排碳足迹分析 被引量:3

Analysis of carbon footprint of night market snack chicken steak under carbon neutral target

摘要 在众多夜市美食中,鸡排是最受欢迎的美食之一,对鸡排碳足迹的考察在于让居民了解食物的选择与采购可能对环境产生的影响。文中基于生命周期评估法,盘查鸡排从食材生产、运输、制作、废弃等不同阶段所产生的二氧化碳排放量。研究结果发现:一份鸡排平均重量为225g,其产生的碳排放量约为0.6582kgCO_(2)eq。从生命周期观点来看,鸡排的碳排放量主要来自食材的生产阶段,为0.3983kgCO_(2)eq,运输阶段0.0228KgCO_(2)eq,制作阶段0.1236kgCO_(2)eq,包装及废弃处理阶段为0.0121kgCO_(2)eq和0.1014kgCO_(2)eq。在此基础上提出的建议包括少吃加工食品,多吃原生态食品;加强食育教育,提高消费者节约意识和食品安全知识等。 Chicken steak is one of the most popular night market delicacies. The study of the carbon footprint of chicken steaks is to let residents understanding the impact of food choices and consumption on the environment. Based on the life cycle assessment method, we examined the carbon dioxide emission equivalent of chicken steaks from the stages of food material production, transportation, production and waste treatment. The results show that the average weight of a chicken steaks is 225 g, and the carbon emission is 0.6582 kgCO_(2)eq. From the perspective of the life cycle of chicken steaks, the carbon emission mainly comes from 0.3983 kgCO_(2)eq in the material production stage, 0.0228 kgCO_(2)eq in the transportation stage, 0.1236 kgCO_(2)eq in processing stage, 0.0121 kgCO_(2)eq in packaging stage, and 0.1014 kgCO_(2)eq in waste treatment stage. Recommendations on this basis include eating less processed food and more raw food, strengthening food education, and improving consumer′s awareness of food saving and safety knowledge.
