农产品硒营养强化现状及合理强化阈值的设定分析 被引量:4

摘要 目的:结合富硒农业发展现状提出农产品硒营养强化合理阈值的设定方法。方法:综述不同国家对硒的推荐摄入量,以及农作物中硒的存在形式、生物利用率和安全性,分析目前我国富硒农产品发展现状,提出硒营养强化的合理阈值设定方法。结果:我国富硒农业不断发展,但相关营养品质判断标准仍待改进。结论:我国富硒农业有巨大发展空间,建议依据食物营养特性与强化阈值进行农产品硒营养素的合理强化。 Objective To propose a method for setting rational thresholds for agricultural selenium fortification based on the current development status of selenium rich agriculture.Method The recommended nutrient intake of selenium in different countries was reviewed,the selenium form,bioavailability and safety in the agricultural products were summarized,and the development status of selenium rich agricultural products was analyzed.Besides,a method for setting rational thresholds for agricultural selenium fortification was also proposed in this paper.Result The selenium rich agriculture is developing continuously in China,but the evaluation standard of nutritional quality still needs to be improved.Conclusion There is a huge development space for selenium rich agriculture in China.It is suggested that selenium fortification of agricultural products should be carried out reasonably according to food nutritional characteristics and fortification threshold.
