摘要
目的:植物酸奶是一类新兴发展的植物基食品。目前,国外植物酸奶品类较为丰富,市场规模较大,分析国外植物酸奶的产品特点及营养成分的含量分布,可为国内植物基酸奶的研发及其行业的发展提供思路。方法:本研究收集和调查了国外1709款植物酸奶产品,利用百分位数法对这1709款植物酸奶的原料使用情况以及蛋白质、脂肪、碳水化合物、糖、膳食纤维和钠的含量进行分析。结果与结论:植物酸奶的营养成分含量与其原料种类有着密不可分的联系。
Objective Plant-based yoghurt is a new kind of plant-based food.At present,there are many kinds of plant-based yoghurt abroad,and the market scale is large.Analyzing the product characteristics and nutrient content distribution of foreign plant-based yoghurt,can provide ideas for the research of domestic plant-based yoghurt and the development of its industry.Method In this study,1709 kinds of plant yoghurt were collected and investigated.This paper analyzed the use of raw materials and the contents of protein,fat,carbohydrate,sugar,dietary fiber and sodium of the plant-based yoghurt.Result and Conclusion The nutrient content of plant-based yoghurt is closely related to the type of raw materials.
