摘要
马铃薯全粉是一种马铃薯深加工产品,是营养丰富的食品原料。随着马铃薯主粮化战略的启动,马铃薯产品将会成为人们日常生活中的主食,马铃薯系列食品的开发与加工创新受到越来越多的关注。主要对马铃薯全粉的营养及其在馒头、面条、面包等食品中的应用现状进行了介绍,为马铃薯全粉在食品加工中应用和进一步的发展提供参考。
Potato powder is one of deep-processed products of potato,a kind of nutritious food raw material.With the launch of the potato main graining strategy,potato products will become the staple food in people's daily life.The development and processing innovation of potato series food has attracted more and more attention.This paper mainly introduced the nutrition of potato powder and its application in bread,noodles,bread and other foods,and provided a reference for the application and further development of potato powder in food processing.
