摘要 虚拟仿真技术作为一种新的教学技术,打破了传统教学模式,在教育领域产生深远的影响。“食品工艺综合实验”普遍存在实验场地不足、大型设备短缺、投入资金较少等问题,与现实中的规模化食品生产有所差异。将虚拟仿真技术引入实验教学过程中,充分发挥其直观、生动等优势,有利于提高教学水平,培养学生的创新和实践能力。 As a new form of experimental teaching,the virtual simulation technology has been broken the traditional teaching mode and has a profound influence in the field of education.The Comprehensive Experiment of Food Technology generally has the problems of insufficient experimental site,shortage of large equipment,less investment and so on,which was different from the large-scale food production in reality.The virtual simulation technology which holds some advantages of vividness and immediacy was introduced into experimental teaching to improve the teaching level,cultivate the creative ability and practice ability.
