摘要
随着乳制品行业迅速发展,蜡样芽孢杆菌导致的乳品污染引起广泛关注。蜡样芽孢杆菌在自然界中无处不在,可在食物中只以孢子形式存在,因此需要直接检测或定量乳品中的孢子。本文综述了传统和新兴微生物法检测乳品中蜡样芽孢杆菌孢子的优缺点,涉及平板法、分子生物学、光学和生物传感器等方法。传统方法耗时、耗力,新型方法灵敏度高,简易性强,但特异性针对蜡样芽孢杆菌孢子检测的方法商业化程度低,基于新识别元素、分析技术和新材料的组合技术有待推广应用。
With the rapid development of the dairy industry,premature spoilage of dairy products due to the contamination by Bacillus cereus continues to cause a wide range of attention.Bacillus cereus is ubiquitously present in nature.There is a need to detect and quantify spores directly in food samples,because Bacillus cereus might be present in food only in the sporulated form.This paper discusses the advantages and disadvantages of traditional and newly-emerged microbiological methods including plate counting,molecular biology,optical and biosensors methods in the detection Bacillus cereus spores in dairy products.The traditional methods are time and labor consuming while the newly-emerged ones are highly sensitive and easy to operate but with low commercialization.The application of technologies integrated with new identification elements,analysis techniques and materials are still to be promoted.
