壶瓶碎米荠多糖硫酸化结构修饰及抗氧化活性研究 被引量:9

摘要 为探索壶瓶碎米荠多糖结构修饰以及修饰后多糖的生物活性变化规律,利用三氧化硫-吡啶法对壶瓶碎米荠多糖进行了硫酸化结构修饰,得到了五种不同取代度的硫酸化壶瓶碎米荠多糖,取代度分别为0.46、0.55、0.69、0.72、0.80。通过傅里叶变红外光谱初步对其改性效果进行了分析。在此基础上研究了改性壶瓶碎米荠多糖的水溶性和抗氧化活性。结果显示:经过硫酸化修饰后多糖的水溶性较未改性壶瓶碎米荠多糖分别提高了40.6、40.1、40.2、40.5、40.6 g/100 g。硫酸化改性壶瓶碎米荠多糖可以改善壶瓶碎米荠多糖的抗氧化活性,其中取代度为0.80的硫酸化壶瓶碎米荠多糖在ABTS自由基、羟自由基、DPPH自由基上具有较好的清除能力。 In order to explore the structure modification of Cardamine hupingshanensis polysaccharides and the biological activity of the modified polysaccharides,the sulfated structure of Cardamine hupingshanensis polysaccharides was modified by sulfur trioxide pyridine method,and five sulfated Cardamine hupingshanensis polysaccharides with different degrees of substitution were obtained.The degrees of substitution were 0.46,0.55,0.69,0.72 and 0.80,respectively.The effect of modification was analyzed by FTIR.The water solubility and antioxidant activity of the modified Cardamine hupingshanensis polysaccharides were also investigated.The results indicated that the water solubility of sulfated modified polysaccharides increased by 40.6,40.1,40.5,40.6 g/100 g,respectively,compared with unmodified Cardamine hupingshanensis polysaccharides.Sulfated modified Cardamine hupingshanensis polysaccharides improved the antioxidant activity of potted crushed rice shepherd polysaccharides,in which sulfated Cardamine hupingshanensis polysaccharides with substitution degree of 0.80 had better scavenging ability on ABTS radicals,hydroxyl radicals,and DPPH radicals with better scavenging ability.
