摘要
硒是人体与动物必需的微量元素之一,硒元素的生理作用不仅与含量及摄入量有关,更与其赋存形态相关,无机形态硒的生物利用率低且安全性差,有机形态硒的安全性高且具有更高的生物利用度,因此不同来源及形态的硒营养强化产品与人体健康相关性研究也越来越受到关注。从基于形态的硒元素检测分析方法入手,系统分析富硒食品标准中硒形态相关检测方法应用及技术发展需求,并从产业发展角度对包括检测方法前处理等技术需求进行分析,可以为进一步研发快速高效的有机硒形态标准检测方法提供理论依据。
Selenium is an essential trace element for both humans and animals.The physiological functions of selenium are related not only to dietary intake of selenium and its content in food,but also related to chemical forms of selenium.The dietary sources of selenium contain both organic and inorganic forms.The organic selenium has higher bioavailability and wider safety margin compared to the inorganic form.Therefore,sources and forms of selenium have gained more and more attention in relation to human health.Systematically analysis the application of selenium quantification distinguishing its chemical forms,as well as the need for method optimization including pre-treatment,can provide a theoretical basis for development of a fast and efficient method in analyzing organic selenium in foods.
