摘要
大生产过程中酵母泥的储存和应用都十分重要。本文从酵母泥稠度、储存温度及储存时间三个方面探究了影响酵母泥储存过程中酵母细胞死亡率、pH值、活力及自溶的因素;从低浓度回收应用于高浓度酿造及高浓度回收应用于低浓度酿造两个方向探究/酵母泥应用的要点。
The storage and application of yeast mud in large-scale production are very important.This article explores the factors affecting yeast cell mortality,pH value,viability and autolysis from the three aspects of yeast mud consistency,storage temperature and storage time;Two directions that low-concentration recovery to high-concentration brewing and high-concentration recovery applied to low-concentration brewing are explored the rules of the application of yeast mud.
