猴头菌-人参双向固体发酵菌质口服液澄清工艺研究 被引量:1

摘要 本研究以猴头菌(Hericium erinaceus)与人参固体发酵菌质浸膏为原材料,对猴头菌-人参发酵菌质口服液最佳澄清工艺进行探索。以人参总皂苷与多糖含量的权重系数各为50%为评价指标进行综合评分,采用絮凝剂和醇沉两种方法对口服液澄清工艺进行摸索。对絮凝剂壳聚糖的用量、絮凝温度和搅拌速度进行单因素考察,同时考察了醇浓度对口服液澄清度的影响。结果表明,当壳聚糖加入量为4%、絮凝温度为60℃及搅拌速度为640 r/min时,口服液的综合评分可达到最高5.57。此条件可有效减少口服液的沉淀量,且澄清工艺安全、稳定,宜广泛应用于生产中,为猴头菌-人参发酵菌质口服液工业化生产提供科学依据和指导。 In this study,the Hericium erinaceus and ginseng solid fermentation fungal substance water extract were used as raw materials to explore the best clarification process for the Hericium erinaceus-ginseng fermentation fungal substance oral liquid.The total saponins and polysaccharides content of ginseng each accounted for 50% as the evaluation index to make a comprehensive score,and two methods of flocculant and alcohol precipitation were used to explore the clarification process of oral liquid.The single factor of the flocculant chitosan dosage,flocculation temperature,stirring speed was investigated,and the influence of alcohol concentration on the clarity of oral liquid was also investigated.The results showed that when the amount of chitosan was 4%,the flocculation temperature was 600 C,and the stirring speed was 640 r/min,the overall score of the oral liquid could reach the highest of 5.57.This condition can effectively reduce the amount of precipitation of the oral liquid,and the clarification process is safe and stable.It should be widely used in production and provide a guidance for the industrial production of Hericium erinaceus—ginseng fermentation fungal substance oral liquid.
