甲鱼抗氧化肽对非酶糖基化反应及其终产物的抑制作用 被引量:1

摘要 建立体外非酶糖基化蛋白质-还原糖模拟反应体系的基础上,探究甲鱼抗氧化肽对非酶糖基化反应的抑制率(NEG)和晚期糖基化终末产物(AGEs)抑制率的影响。结果表明:甲鱼抗氧化肽能够抑制非酶糖基化反应和晚期糖基化终产物的产生,具有剂量依赖性。当甲鱼抗氧化肽处理蛋白质-还原糖体系21 d时,1.00 mg/mL甲鱼抗氧化肽对NEG的抑制率达68.79%;当处理28 d时,1.00 mg/mL甲鱼抗氧化肽对AGEs的抑制率达89.35%。红外光谱结果也证实了甲鱼抗氧化肽能够抑制糖基化反应进程。 On the basis of establishing the simulated reaction system of non-enzyme gluco-sylation protein and reducing sugar in vitro,the inhibitory effect of turtle antioxidant peptide on non-enzyme gluco-sylation(NEG)reaction and advanced glycation end products(AGEs)was investigated.The results showed that the mass concentration of anti-oxidation peptide was 1.00 mg/mL,and the inhibition rate of NEG was 68.79%when incubated for 21 days,the inhibition rate of AGEs was 89.35%when incubated for 28 days.Infrared spectroscopy results proved that antioxidant peptide of turtle could effectively inhibit the production of AGEs in non-enzymatic gluco-sylation reaction.
