摘要
消费者对生鲜食品需求的与日俱增引起各界对其质量安全的关注。生鲜食品质量的控制涉及很多方面,文章主要针对生鲜食品在物流配送环节的质量控制问题,应用HACCP体系关注事前、事中和事后3个阶段进行全过程的质量控制,并且结合FEMA理论预测潜在风险以及QFD质量屋考虑顾客需求来综合制定预防措施,最终建立完善的生鲜食品物流配送质量控制体系。
Consumers’ increasing demand for fresh food has aroused the attention of all walks of life to its quality and safety. The quality control of fresh food involves many aspects. Aiming at the quality control of fresh food in logistics and distribution, this paper applies HACCP system to pay attention to the whole process of quality control in advance, during and after the event, and integrates FEMA theory to predict the potential risk and QFD quality house to consider the customer demand to formulate preventive measure, and finally establishes a perfect quality control system of fresh food logistics and distribution.
