不同品种草莓果实生物活性物质和抗氧化能力比较 被引量:10

Comparison of bioactive substances and antioxidant activity of different strawberry cultivars

摘要 [目的]本文旨在明确山西晋中6个草莓品种果实的生物活性物质含量及其抗氧化能力。[方法]采用Folin-Ciocalteu法、NaNO_(2)-Al(NO_(3))_(3)-NaOH比色法、pH示差法分别对4个红色草莓品种(‘红颜’、‘妙香’、‘香野’、‘圣诞红’)和2个白色草莓品种(‘雪兔’、‘粉玉’)果实的总酚、黄酮和花青素含量进行测定,并用DPPH·清除率、ABTS·清除率和FRAP值三种抗氧化指标评估各品种草莓果实的抗氧化能力。[结果]‘红颜’草莓的总酚含量最高,为1.82 mg·g^(-1);‘妙香’草莓的黄酮含量为2.43 mg·g^(-1)FW,花青素含量0.18 mg·g^(-1),均高于其它5个草莓品种;‘粉玉’草莓果实的总酚含量、黄酮含量和花青素含量均是6个草莓品种果实中的最低值;‘红颜’草莓对DPPH·清除率和ABTS·清除率最高,分别为54.83%和47.93%,‘妙香’草莓的FRAP值最高,为2.79 mmol Trolox·g^(-1)。白色草莓品种果实的抗氧化性均低于红色品种草莓果实;不同品种草莓果实的总酚含量、花青素含量与ABTS·清除率呈显著正相关。[结论]红色草莓品种的生物活性物质和抗氧化能力整体高于白色草莓品种。本研究为优良高功能性成分品种选育、栽植和功能性产品开发提供科学依据。 [Objective]The objectives of current study was to clarify the content of bioactive substances and antioxidant activity of six strawberry cultivars in Shanxi Jinzhong.[Methods]The contents of the total phenols,flavonoids and anthocyanin in the fruits of four red strawberry varieties(Benihoppe,Miaoxiang,Kaorino,and Ssanta)and two white varieties(Yukiusagi and Fenyu)were measured by Folin-Ciocalteu method,NANO_(2)-Al(NO_(3))_(3)-NaOH colorimetric method,and pH differential method,respectively.The DPPH·clearance rate,ABTS·clearance rate,and FRAP values were evaluated to compare the antioxidant activity of strawberry fruit in the aforementioned cultivars.[Results]The results showed that the total phenolic content of Benihoppe strawberry was the highest at 1.82 mg·g^(-1) FW.The flavonoid content and anthocyanin content of Miaoxiang wais2.43 mg·g^(-1) FW and 0.18 mg·g^(-1) FW,respectively,higher than that of other five strawberry cultivars;The content of total phenols,flavonoids,and anthocyanin of Fenyu was the lowest among all six cultivars.Benihoppe had the highest clearance rate of DPPH·and ABTS·,which were 54.83%and 47.93%,respectively.Miaoxiang showed the highest FRAP value,which was 2.79 mmol Trolox·g^(-1).The antioxidant activity of the white strawberry cultivars was lower than red ones;the total phenol content and anthocyanin content of strawberry fruits were significantly and positively correlated with its ABTS·clear rate.[Conclusion]Red strawberry cultivars had higher content of bioactive substances and greater antioxidant activity than that of white cultivars.This research provided a scientific basis for the breeding,planting,and functional product development of excellent high-functional ingredient strawberry cultivars.
